I don’t think you can craft anything from them. You have to send them to Jeremy Gill via the post office. Once all the legendary fish are collected and sent, I believe there is a reward.

The only issue I have is when you have to take a slow ass stagecoach to a place that's kinda far.
Rockstar needs to have an online element where when people on your friend's list get bounties over $50, you can join their game as a lawmen and have one chance to hunt them down.
