Haven't tried it myself, but I read if you do it from your horse, you'll skip the animation.

Ok this game is wild.

Some bandits tried to ambush me and I just killed them all. Game told me if I didn't hide the bodies I'd get the Feds on my ass.

So I'm picking up the bodies and throwing them in some shrubbery then some passerby on a horse gets the drop on me like:

Witness: Did you do all this?

Me: *Defuse Option* Naw, I just came and found them like that

Witness: *Races off* *MURDER WITNESS*

Me: *give chase*

Clapped him off his horse. Looted and threw his body in a near by pond

So the game kind of forces you to be an 'evil' outlaw?
