Why is it some females will go out of there way to show no signs of interest in you even though they are interested?

I had a friend tell me that one of her friends(who Ive seen at a few social gatherings) thought I was cute but the friend didn't think I would like her. I was like

Her and I have never really talked like that.... and when we did talk it would be basically on some hey how are you? Lets keep it moving type ish. Plus I noticed the very few times we would speak she held her head down. I was basically like whatever.... Didn't even occur to me that she was interested in me.

I have a confusing situation.

I met a woman through a mutual friend. We texted/talked on the phone daily and began liking each other. This lasted for 2-3 weeks before meeting in person (conflicting schedules). We met at her place and spent the whole weekend having sex. When I left, she said her feelings weren't the same but she wants to remain friends. She still asks how my day was, monitors my tobacco intake and
cooks for me when I come over and we have sex 3-4 times a week. I wanted to be serious with her but she wants to keep things on this level. Any advice or input?

- I met her and she's a real deal model (skinny and TALL) Glad I'm 6'2" She's 5'11" and BAAAAD
- Ethiopian and gorgeous. No kids. Hard to read. Shes very picky and said I could be the one.
- We spent the whole weekend together. Only reason I'm posting now is she left to feed her dogs. She's OTW back now

Definitely gonna get WAY more in depth. We were talking about what we want in a relationship now which is CRAZY b/c I was THIS fukkING CLOSE to leaving her ass with the check on our initial date at the sports bar Friday.

She's smart(good career). She can cook like my momma and goes to the gym almost daily. Sex is good which isn't everything but she's literally the only chick I can tolerate being around once sex is over. She makes me wanna do better and doesn't even know it. She hasn't' met my kids but she asks about them. She just seems like a winner. I'm not chasing her, I'll definitely milk the situation as long as I can. I just didnt know what happened.
