This vegetarian thing was just ok today.
Breakfast: 2 egg omelette with jalapeño, onion and garlic cooked in coconut oil with pepper jack cheese.
It was ugly but it had a good taste.
I had ice cream for lunch and some grapes.
Dinner: cornbread and meatless collard greens. I used liquid smoke instead.
Tomorrow I'm doing zucchini quesadillas with some spinach wraps. Either that or burritos. I'm thinking a sweet potato for dinner.
