I never knew she was mixed until I was browsing a website that had a list of celebrities that people didn't know were mixed. She doesn't look black, doesn't associate with black people or black culture, never dated black men in the past, etc so I don't know why some black people want to claim her.

The average African American is already mixed to some degree. If her mother is African American and her father is 100% European, does Meghan Markle have more European or African DNA? so why is she claimed as black rather than mixed?

You answered you're own question really. If most African Americans are mixed to some degree then a Megan Markle or two might fall out if they shake their family tree. Culturally/historically mulattos were treated as subhuman or less. Just like black people.
