You gotta get good Collards that are young & fresh
Put a small amount of sugar in it to help cut the bitterness if you have some regular greens
Put them in a pressure cooker with garlic powder, onion powder, a little vinegar, a little salt & black pepper, a little red pepper flakes, & oil or butter. Cook them shyt for 30 minutes
You can either cook it down if its too much liquid for you, or just drink some of it. That's what you call "pot liquor", it's full of nutrients.
Collard greens are perfect for rich, fatty foods like Mac & cheese, the bitterness helps cut through the fat.
Plus, its rich in calcium/vitamin A, the fatty foods will help absorb into your body. If you eat foods with vitamin D like macaroni & cheese, calcium absorption is enhanced even more
