Im looking at what’s next and I’m not really a huge fan of much more in the Rolex catalogue and thinking of a Cartier Santos.
But I got a son on the way and just bought a car. Man’s bank account is almost on fumes

You always want to try on a watch and see how it fits on your wrist, pictures can be deceiving. And then as far as the movements go, your choice is mechanical vs quartz (battery). Quartz will be cheaper but not have the same value retention or 'respect' as a mechanical watch.
Also since it's your first watch I would go with a classic Santos or Tank look, but they announced some heat this month:
But you're better off going with a classic steel look, that you can wear everyday.

Right now I rotate these two (unless i'm wearing my grandfather's Hamilton retirement watch from US Steel) to honestly to make it clear I'm not perpetrating a fraud...
