As good as phones are they still cannot compete with a Mirrorless camera. Photography is a hobby and is also a costly investment. What's most important are the lenses. If you want take up photography on a budget there are plenty of mid tier cameras under $1000 in the used market. I've been taking photos on my Pixel for years but finally decided to buy a Sony A6600 and it's a night a day difference. If you go FujiFilm they have one of the best kit lens on the market. Samsung has also recently been called out for their suspect moon photos so take that with a grain of salt. Also from my understanding DSLR is a thing of the past and Mirrorless (APS-C or Full Frame) is what you're looking for.
