Firstly, you cooked the chicken in a bowl, which means that the heat probably wasn't evenly distributed, and some pieces are probably undercooked.
If you'd covered it with foil, at least the heat would've been contained and perhaps permitted to permeate the meat better. As well as held moisture, thus keeping the chicken somewhat tender.
That bird was probably tough as a mug, as well as being bland.
If you'd added some olive oil and parsley to the bowl, and added the tomato slices as well, you could've had a bootleg chicken cacciatore imitation, rather than the struggle meal you actually made.
Go shopping breh.
And walk down the spice aisle and look at the shakers, and pick them up.
