yep ...my time in seattle... i learned about all the cuts of different fish......nikka goin to pikes jus buyin the worse parts of fish.. nikka didnt know a alantic halibut from a alaskan and the alaskan taste better n they are entire different species...

toro, you have the otoro and the chutoro..... “O” means big and “Chu” means medium in Japanese

most hueless yankees dont know their tuna cuts

It also correlates with the region of the belly that the flesh comes from. Also, toro is pretty common. Try some hoho-niku. You may have to order it off of the menu as some don't promote it but if you enjoy toro then you will love Niku. Pro tip: let your toro sit for at least 3 minutes before you eat it. It lets the fat settle and release the oil, further enhancing the flavor.

For real though, I felt a similar shock the first time I went to an asian grocery store. All kinds of meat, vegetables, and snacks I had never even seen before. I go all the time now, they shyt on American grocery stores.
