It's pretty straight forward. You are basically just doing intervals of all out speed with a measured pace for a certain amount of rounds/time: I've experimented with
20 seconds on/40 seconds measured
30 seconds on/60 seconds measured
X amount of cals per the bike in the shortest time possible.
For perspective my on speeds are between 26-29MPH and the measured speeds are in between 18-20MPH.
