His deficit weekly should be 3500 calories which is roughly 1 lb if fat and 500 calories below maintenance a dayStrength train 3-4x a week. Eat at a caloric surplus for a season by focusing on high protein foods, don't worry about the fat.
Then do a massive cut the following season, like 60% of you daily maintenance. Focus on high carb and foods. Avoid fatty foods.
