You should only touch a burger patty a total of 5 times once you begin cooking.

1. Pick it up off the plate with the spatula and put it on the grill put it on either the direct side or the indirect side depending whether your doing a sear or a reverse sear.
2. Flip once
3. Move to the opposite side depending which method of searing you are doing. Do not flip the burger while moving it.
4. Flip once
5. Remove burger from grill and put on plate.

I use the reverse sear method. I put the burger directly over the coals, 2 mins each side
Slide the burger over to the indirect side and let cook to about 130-140 degrees, then flip, and let it finish to 155-160-165.

nikkas be doin all that pressin and flipping, squishin, and turning. Let the shyt cook. You can take the burgers off at 155 because they will still be hot and cook up to 160 once they are removed. I start poppin them off at 155ish.

I've never cooked on wood only how does that come out? i usually use charcoal and wood chips sometimes the charcoal has wood inside it.

I usually mix coals w/wood chips (I meant to say coals AND woods only...meaning no gas).

Might fire that thang up this weekend :smoker:

Ive heard that the realest of real charcoal is all wood, no excess carbon chemicals or sediments/fillers. Ive cooked on straight wood, I burn straight wood with my lil fire pit I got from walmart, me and my homeboys were drinkin one night and said :manny: and made a make shift griddle over the open flames and it was legit.

If you use Royal Oak, its from 100% burned wood or whatever...way better than kingsford unless you get kingsford competition which is supposedly like Royal Oak standard. Never use quick light or self starting and all that shyt. they are doused in chemicals (typically lighter fluid) and unless you let it burn a little past when you would put regular charcoal on and it gets all grey food like chicken and hot dogs do have a weird ass taste to them.
