The ending feeling incomplete in that we didn't get any follow up between Atreus and Sindri. Them repairing the relationship between the two would defeat the entire purpose of the lesson that Kratos was telling Atreus all game long in that war has consequences and it just so happened that the people who suffered the most from it, were the people who actually cared about him like that. Atreus didn't learn that lesson until he saw Skjoldr and the other Midgard citizens being forced into battle.
Him taking the L and learning from it would foster more character growth long term than them repairing the relationship even when you could argue Sindri deserves just as much blame for what happened to Brok as Atreus.

cause the game designers didn’t want his big ol’ carcass on the ground for the Odin battle
They are inconsistent when it comes to what disappears and what gets to stay in corporeal form
I honestly think it was intentional. Because while you say they have been inconsistent. I'm pretty none of the other Gods had that happen. They explained in the last game when Modi died that it was weird he didn't disappear. Odin pointed out in this game that all the lesser beings go to Valhala or Hell when they die, so that explains why all the monsters and humans you fight disappear. But he wanted to know what happens to Gods after death, and up to that point none of them disappeared.
only other canon explanation i can think of is Thor being half Giant
