The thing about Star Wars is that they already told the best story. You can't create a greater antagonist than an evil galactic empire.
The most interesting stories are about how that empire was formed, what the world is like during its reign and its eventual defeat.

The books they eliminated from cannon fleshed out.

An entire new host of characters. Plus built upon what makes star wars a draw. Being centered around family.
