It's all about the style your running. Yeah it's always random but the more you roll the more ??? You'll unlock and know what to gamble on. I run an assassin so I focus on the cooldown reset perk on all my items.

I use Samurai and Hunter. My hunter if I remember currently has a moon blade with stone and I think melee damage and oni damage. If I roll I'd lose one of those?

It depends on which roll. The 1st one changes everything, the 2 in the middle change each perk and the one on the bottom. Changes the extra perk. However when you roll one of the bottom 3 you lock the other 2 and have to reforge to roll those again.
