I went to UCF.
The fact that it's a commuter school is a major reason. There's not really any sports tradition. Yeah there's a big stadium, huge population, etc. but no one's excited about it like at FSU, UF, to a somewhat lesser degree Miami (sister went there). UF & FSU are pretty entrenched in the area fanbase-wise, and a lot of kids growing up in the area have at least one parent that went to either FSU or UF.
Also, when I was working retail while at UCF, we had a day at work where we could wear the college team's shirt/gear etc. for a weekend. Went to the closest mall, no UCF shirts, only FSU UF Miami & other big universities. Only places to get it were campus store & online.
Couple that with some other reasons listed here, & there you go.
But I do think it's just a matter of time, it's got the infrastructure & appeal, just needs to string together something special in a major sport to start drawing attention.
