Why are they playing off

here is what I dont get

I understand Schwartz logic about...bring the pass rush...play off man coverage and look for a INT BUT if the pressure doesnt get home- its pitch and catch football for a 1st down all game long
also...if you play press...you GIVE YOU LINE A FEW MORE SECONDS TO ACTUALLY GET HOME!!!
