If I was an up-and-coming producer I would do this. All day every day.

I don't know where you're based, but $20, an hour, a sandwich and a cup of coffee could probably get you an hour with a subway saxophone/pianist/guitarist and get him to riff over a selection of your beats.

Choose joints with different tempos, keep 'em recorded and you can cut 'em up however you like and you'd have an hours worth of live instrumentation to sample or place in future beats.
