Here's how it works.
The same factory producing the legit ones wil be given extra material in case mistakes in production are made so the order can be filled. The Chinese boss makes sure his slaves don't make a single mistake in production. He then uses the additional material to then make his own. Whatever material is missing he'll get from other factories. I know this from manufacturing classes. shyts all the same really.

People come from all over china to apply for factory jobs. They screen for and pick the best and whatever skill set they have. Companies also have people out there to ensure the quality is on point.

The workers who aren't as skilled and don't get hired get scooped up by the replica factories.

In all honesty the replica factories can probably make legit items but they probably don't want to get sued and shut down and even if they do make them its going to cost.
