To be fair, what I saw portrayed in the Last Dragon was an appreciation of the culture rather than an appropriation of it.

"Ching Chong" talk? Which characters are you referring to? Only characters I can think of the comes close was what you described was one of Sho'nuff's goons that was purposely mocking the Chinese accent in order to taunt Taimak. Given the context of the scene, dude's meant to be a racially insensitive jackass but it still doesn't fall under cultural appropriation. All in all, the movie's a love letter to Bruce Lee/Kung Fu flicks.
