There is a difference between popular with Star Wars fans and then popular enough to sell a video game or movie.

Let a Star Wars movie come out that has no Jedi and i guarantee it doesnt do as well as any of the others.
Star Wars: Bounty Hunter did over a million sold. And it was just an ok game. Some of the better Star Wars games have done around that number and according to VGChartz, the highest selling game is one of the Star Wars lego games which topped out at 5 million. So I'd say that Bounty Hunter game did pretty good and people were indeed interested. It just wasnt that good of a game which is most likely the reason it didnt do even better, because Battlefront sold like crazy and you couldn't use a light saber or Jedi to fight. So as I said, people want games that are based in the SW universe. When I played the Old Republic there were plenty of people running around as troopers and bounty hunters and smugglers. Not just people with sith or jedi.

As far as a movie is concerned, if the movie is good and tells a good story then it will sell like crazy as well. SW has gone beyond just jedi and lightsabers. That may be the signature of the series, SW is so main stream at this point that you can release almost anything with the SW brand and it will do fine.
