Sue is a fairly complete T-Rex, with 73% of the 350 bones intact and 90% of the skeleton recovered by weight. The skeleton is 42 feet long, 13 feet tall, and the skull alone weighs 600 pounds.
The highlighted bones are real, not replica. You can see it's mostly only missing a bunch of middle vertebrae, a lot of the hands, and one foot. They recovered the real skull too but display it separately because it's too heavy to attach safely.

Horridus, a quite complete Triceratops found, is 23 feet long and 7 feet tall. They've found 267 of its bones, 85% of the known skeleton. You can see that parts of the back hip, one leg, and several ribs are replica, but 98% of the skull is intact.
The "Dueling Dinosaurs" are a small tyrannosaurus and triceratops preserved intact together and possibly fighting (some tyrannosaur teeth are lodged into the triceratops bones). They've only just begun studying it because it was part of an ownership dispute for 10+ years, because one family owned the land it was found on but a different family owned the mineral rights.

This is the tyrannosaur, 98% complete and still left embedded as found.
This is a recreation from above of what the two skeletons look like as found, if you removed all the sediment.

The depth in which these fossils have been studied is extensive. It isn't like they're just looking at rocks and trying to make them look like bones, the skeletons have been studied so exhaustively that over 1,000 separate species of dinosaur have been discovered.
