the only defense is to pretend you forgot your passcode, pattern or Password
even if they think you lying they
can't Prove that
They can force your Finger on the phone
They can force a face scan
they can force an Iris scan

No they can't because you can fail with the wrong finger and it will require a pin. With my Note if I press the wrong finger 5 times quickly it will lock and require a pin which I don't have to give them. Now with face unlock that isn't an option. I don't use face unlock or iris scan. Haven't even set them up.

cause courts have ruled that they can Forcefully place you finger onthe Phone themselves

Anything that you have locked requires a search warrant.
Anytime the cops ask you to do something it means that they can't legally make you. You have to listen to the wording they use. So many people get caught up by giving them permission to search their stuff and not even realizing it.

Even with a search warrant
If u have a pin or pattern lock u can pretend u forgot it and keep giving the wrong one
With fingerprint or facial lock
They can manually make u unlock it with force

Maybe the reason the other 3 ways you mentioned don't require legal force, is because they have ways of overriding them anyway
