Can you break down this technique for the uncouth?
yeah, get you some button mushrooms (one cup or half a cup depending of the size of your sauce), some extra virgin olive oil, a clove of garlic
Slice the mushrooms as thin as you can
dice the garlic till it's damn near a paste (use as much as you like- adjust the oil amount as needed)
add the olive oil over low heat
add the garlic right away - do not let it brown, mix the garlic into the oil until well incorporated
add the mushrooms once the garlic is incorporated into the oil well,
stirr the mixture and cover the pan to alllow the mushrooms to sweat
periodically open the sauce pan to stir the mixture, keep it on low heat
keep stirring until the mixture has no water in it and it's just a thick oily mixture,
add salt to taste- you won't need it because it's so flavorful
add mixture to your spaghetti bolognese
*if the acidity is still too much add 1 tablespoon of brown sugar - NOT WHITE sugar.
