How many people interested in the game have discord? I know a decent amount of people on the list probably already are but it might be easier to organize it through there.
I think 12 would be the minimum amount of teams we would need for a fun league so if we got that or more, I'm down to run it.

How many games a week?
Not sure. That will depend on how many people we have running. The less people, the less that would be needed. But if we can get 12+ probably about 4-7 games a week would be good. Usually need about 20ish games to qualify for playoffs over a month long season
