I'd suggest waiting it out a few months, as new Nvidia cards and Intel CPUs are coming out shortly. If you don't wanna wait, I'd go 8700K, 1080ti. Don't game on 3 monitors, it's not worth the hassle. I was super into 3 monitor gaming back in the day, but the industry stopped supporting it and community stopped making mods to get 3 monitor gaming to work. Plus, you need a monster GPU to run 3 monitor gaming.

i feel like 3 monitor gaming has been replaced by VR. Seems way more immersive to me
i don't think it would offer much of an advantage tho unless you're playing something like hand simulator
