The first and only time i had lamb was like 5 years ago in a gyro at some Greek deli, was absolutely amazing. Every now and then i look for lamb when i go food shopping but almost never find any in the grocery stores.
Lamb in a gyro ain’t even close to these though. If you thought that was good...GO get some real lamb chops.

Don’t have to be the Costco ones though, grab some from a restaurant or food court.

It will never replace staples like chicken (or beef), but it’s a good change up once in a while.

May seem a bit extra, but you should make friends with a butcher. You'll be swimming in proper cuts and shanks in no time.

Like Lobster and Saltfish, that shyt made strides in the good popularity department and made it a delicacy that costs, which sucks.

And I get slot of flack for not openly fukking with Oxtail (Bullfoot/Goat head soup is my go to) like that shyt but I'd be lying if I said a few meaty cuts with a competent chef ain't some of the best cooking you'd eat.:ohlawd:

:jbhmm: nearest costco is an hour+ from me.

:patrice: would it be worth it to drive all the way out to civilization and throw these in the sous vide water?

:mjcry: cause I'm fighting the urge

They're already braised, breh. No point in sous vide unless you're just using it to warm them up. If that's what your doing though :salute:

I like doing shanks with Indian spices almost more than rosemary shanks. Sear them in a big pot, take them out, add cumin, cardamom, maybe a cinnamon stick and fry those, add onion, garlic and ginger and fry until their soft, add your powdered spices and fry until its a paste, put the shanks back in, add a can of tomatoes and simmer for 2 hours, serve over basmati
