So I'm back.


Spices

I find it best to grind my own spices sometimes, that way I know exactly what goes into everything and it's much easier to control the salt content.

Any dried berries or seeds can be toasted

Fennel seeds
Coriander/ Cilantro seeds
All spice berries (pimento)
Clove
Cumin
Cinnamon
Pepper corns
Star Anise
Cardamom
Amongst others.

Toast hard woody spices in a dried pan to release the oils before grinding. Powder spices will go bad when they get moist or the essential oils within it become rancid so by having the raw product you can grind as much as you need at will. A little will go a long way as you will not need to use nearly as much to get the end result.

Here's some I toasted today, that I used to marinate the duck for tomorrows dinner.

I toasted Star Anise, Green Cardimom,All spice berries,half a cinnamon stick,pepper corns



You can see the steam coming off the spices. The heat puffs up the outer shell of some of the spices and once you crack it open the house fills with aromatic smells
