You can do this on other platforms like Indiegogo, but all Kickstarters have a set amount of time. I think a lot of projects that don't have expiration dates for funding don't ever get fully funded. People need the deadlines to actually make sure they donate instead of thinking "I'll just donate later."

A lot of successful kickstarters will let you donate to their Paypal account for people who missed the Kickstarter or people who want to give even more money.
