Magneto off Xmen CoTA was one of the hardest bosses to beat.
The last boss of skies of Arcadia dang that dude was a loc, "seek penance through death"
That dragon off the witcher 2 I must have died about 50 times on him.

This and the final boss in Sonic Adventure 2.
