Chitlins is one of those things where as long as you just consuming and ain't thinking about what you eating they are great. This video might've just ruined it for me lol.

I guess you're supposed to stop feeding your pig before you harvest them to clear out their bowels. My relative told a story about how their pig got out but he still had to slaughter it and refused to eat chitterlings after that.
