It's a family secret but to share its all in the marinade. Marinade is a blend of thyme, allspice, scotch bonnet, scallions, ginger, brown sugar, soy source, vegetable oil all blended up then on the grill charcoal but we add pimento wood to burn with the coal. The chicken is washed with lime juice prior and in a big bucket or pan we add the chicken to the marinade and stored in refrigerator. I prefer to grill a whole chicken but cut them in half vs doing in quarters, it's juicier. When done right you taste the flavor down to the bone in the chicken
1. Take your favorite jar/canned chicken/turkey gravy and add in some cooked chopped mangoes or use a mango sauce or a mango salsa of your liking..(I prefer no corn syrup sauce when using this method

2. Cook some chopped up mangoes/chopped garlic and onions,some seasoning salt or tony's creole seasoning with your pan drippings
Add in a mix of corn starch or flour with water and add to the pan and stir until thickened.
