WHat yall cooking wit?

I'm just on a basic weber charcoal.

Someone mentioned their chicken breast be dry.

On the grill I sear mines first(I marinate them too)

Next I put them in a foil pan with a marinade or sauce of your choosing with some chopped onions.

The breast steam and bathe in the juices and comes out so tender:ohlawd:

I'm doing it right now with pork chops..smothered in a mango gravy I made :shaq:

Still using my 18" Weber Jumbo Joe from my apartment days. Can't wait to start grilling outside this weekend, but now that I have more space I'd like to get a bigger one for the patio. Any recommendations on a good charcoal joint or just get a bigger Weber?

Move off the charcoal bricks to those like real hardwood charcoal mini logs. Much better tasting smoke. Get the applewood chips and soak them prior and keep throwing them on the coals.
Wrap onions in foil and thru em on the coals.

Where you have that open space on the Weber, for the nice smoking setup put corn there, near the coals, still in the husk. This weekend I did it had the "handle" of the corn touching the ash. :banderas:
My homie told me that this technique had him feeling like he was in Nigeria eating that corn.
:wow:
Bringing back the feeling. I hung up my tongs for too long. Back at it for the 19-2020

Might make some salmon and chicken this weekend

Good thread, I have some tips:

  • Smoked paprika is a great base for a dry rub and works with basically anything you want to grill
  • Brining a pork chop before grilling it is really easy and makes all the difference
  • The best homemade burgers are with lean or medium ground chuck and nothing else but salt and pepper
  • Grilled red onions are delicious

We doing it up big for memorial day weekend. The men in my family we all know how to cook and work a grill. In fact I ain't never seen a female family member use a grill. If I'm bbq Saturday I'll have meats (chicken and pork) marinating from Thursday. I make authentic Jamaican jerk chicken. I also make an American style variation of bbq chicken and ribs. To keep the meat moist we use a spray bottle with beer. You got to know how to control your heat. BBQ sauce of choice is Sweet Baby Ray's Sweet and Spicy. I'm grilling Sunday. On deck will be roast corn, fried whiting, fried shrimp, BBQ and jerk chicken, jerk pork, ribs, Oxtail, curry goat, Manish water, rice and peas, escovich fish and other sides. Circoc all flavors, beer (coronas, Heineken, red Stripe, Hennessey too much to list. Between me and my cousins we spent at least 2000 on food/drinks.

If you putting aluminum foil on your grill kill yourself.
