Well, in real life, there is a phemonemon called "Phantom Limbs syndrome" where an amputee can still feel pain or certain feelings in the area in which the limb is no longer there. It feels as if the limb is still there, because the brain is still sending signals to the area via the nervous system..
I hypothesize that Grey Worm had Phantom Limb around the area where his penis used to be. As soon as he saw Missandei naked, her nudity probably triggered it and for a sec he probably felt like he still had a dikk.
