Brock was getting reckless and was listening to Paul less and less after the Hell in a Cell match. Combine that with a revitalized Big Show as a threat, and Paul just decided to bet on who he thought was the favorite in the situation.
They added them a while ago but just never mention his name in the bookmarks.
Brock had the match won though

Watch the build up from No Mercy until Survivor Series. The whole story is about Brock being too reckless for his own good, not listening to Paul, and getting hurt because of it. Paul just underestimated Brock when it came to the actual match with Big Show, but went along with the plan because, at the very least, he could trust Show to not fly off the handle and do something stupid (in his eyes, at least).

It's too bad they don't hold shows in the Garden anymore. The last one was Survivor Series in 2011 but it wasn't the same without those double doors.
