How do you like your steak?

Most kitchen overcook it slightly so when I ask for medium i often end up with a well done steak . asking for medium rare usually gets you the best steak.
I can eat rare as long as the middle is hot. You can't just bring a steak out the fridge, sear it on both sides and call it rare. You gotta let sit until its room temp before cooking.

I prefer medium...can do medium well or medium rare if it isn't too rare. Well done is too tough and dry for me. Don't want it too rare either with blood flowing everywhere.
