Mine would be Roose Bolton. I hated him for betraying Robb but he eventually won me over man. The character was so cool, so cold so calculating with a great screen presence, Michael McElhatton played him incredibly great actor.

Doran Martell got done horribly in the show and this is coming from someone who hasn't even read the books, could have been so much more. The pathetic way he got killed off...In the book he is even better and would never fall prey to his son. He was too shrewd for that.
All the major strategic players got short changed on the show. I could never hate Littlefinger because in the book he is also a master strategist and not like obviously evil like he is on the show. Plus he is a peasant not a royal and he still was able to gain power in Westeros.
Bust another character they didn't even give enough screen time to on the show for you to form an opinion of him who is also a master strategist is Doran Martell. He has a gigantic plan for his family to get on the throne that involves his kids and he and his children's storylines got cut and overly simplified on the show.
