I chose to ignore the stipulation of a pre-gunpowder based strategy because the fortifications defending the Magic Kingdom and housing its troops was built with modern technology and therefore should be also considered a target for modern warfare.

Phase 3:
Securing Mainstreet USA (now Mike Station) and Tomorrowland (Tango Base): By this point we should be concerned with securing our assets in Mike Station and Tango Base. You will see in the map below that I have shown the locations of sniper and machine gun teams along the buildings and alleyways in the two operations centers. The weapons should be made to cover key positions likely to receive any counter attack through likely avenues of approach with overlapping fields of fire and pinpoint targeting by the snipers. Note also that there is still artillery in the forest ready for the enemy.

lol yeah

the second answer uses medieval warfare though:

Send in catapults and trebuchets and mount them in the center island. They must be out of reach from archers and other retaliatory siege weapons. Begin the attack with these siege weapons, taking down sections of wall in the front. You must have truly powerful weapons as the walls of Cinderella castle are quite high. If possible, focus your fire on the highest towers because this is where the enemy will have the best vantage point for observing your movements.

Well if the country fell into chaos Disney land would be an asset because undearneath it are a nice supply of rations. The military and militia groups would take all of the malls.

good point.. they got space, they got parking, they're situated in strategic traffic areas, they're already built to support large groups of people (lots of toilets, etc)

And once you take it, its hard to take back without completely destroying it.
