They didnt even take the meat. That actually annoyed me like crazy. Some dummy coulda made a buffalo burger stand and made a killing off all that. They took the skins and let them rot. Birds ate tho. Bugs too. Noone cares about that.

Native Americans never really killed for sport. When the Europeans came, they were just killing just to kill. They'd slaughter buffalo just to scare the natives. And when that didn't work they slaughtered the natives.
That carcass weight probably includes bone or organ meat that the typical person won’t eat. Brains, liver, kidneys etc. When people butcher a deer they only expect to get about 1/3 the weight in edible meat. Probably a little worse than a cow. I don’t know if they mean a hanging carcass or not
There's a thing called a cow share. You and 2 other people basically split the cost to buy and butcher a whole pasture raised high quality cow. You can usually get enough beef to get you through the year.
