Yesterday i roasted some green peppers, string beans and zucchini. 425 degree oven, put them on a cookie sheet and seasoned with a little lemon juice, olive oil, salt and pepper. I cooked them maybe 15 minutes total, tossing them every few minutes.
Paired that with rice that I cooked using coconut oil. I shallow pan fried some fish too but I didn't like the breading for some reason (corn meal and a little flour mixed). So I'm going to scrape it off and mix with some tuna to make a "fish" salad. I use Greek yogurt instead of mayo and it taste alright.
