Vanishing Caloric Density - Why you can't stop eating junk food

So I was having a talk with one of the doctors who works at my job and he mentioned Vanishing Caloric Density.
It's a fascinating concept.

Basically some food engineers in the 1960s (I think) figured out that if you consume a food that melts down quickly in your mouth, your brain doesn't process that you are consuming any calories and so you don't get any signals in the body to stop eating.

This is why you can eat tons of potato chips without feeling full.
I'm just sharing because I think it's interesting that once you're aware of this, it kind of alters the foods you choose to eat.

Wouldn't it be great if there were a food you could eat endlessly without worrying about fat? As every delicious, perfect bite melted in your mouth, so did the calories? Get this -- with some of your favorite snacks, your brain thinks it has.

Painstakingly researched by food scientists, certain snacks and foods trick your brain into thinking those foods have no calories. First brought to light by food scientist Steven Witherly, this phenomenon is called vanishing caloric density. Here's how it works.

Witherly describes Cheetos as the perfect example of vanishing caloric density [source: Moss]. Besides the fact that they taste awesome, Cheetos have an interesting texture and construction that makes them melt in your mouth. When a food melts down quickly in the mouth, your brain interprets the food as having no calories – as if once the food has disappeared, so have the calories. And this is why you can keep eating Cheetos for a long time without feeling full. Other foods with the same effect include ice cream, popcorn and cotton candy.

If junk food already tastes good, we're likely going to eat it anyway. So why are food scientists so focused on vanishing caloric density? The reason is sensory specific satiety (SSS), and it's all about the psychology of eating.

Perhaps you love pizza. You love pizza so much, you think, "I could eat pizza all the time, every day." In reality, though, eventually you'd get pretty tired of pizza, and sensory specific satiety is the reason. Humans crave novelty. Even though we enjoy a certain food, at some point we'll desire something else.

When food scientists work with a company to develop snacks and products, they take facts like vanishing caloric density and sensory specific satiety into account. Snack foods like Doritos or Cheetos don't have a specific, single flavor. Every flavor melds together. This avoids sensory specific satiety, so you'll keep going back for more. And those chips melting in your mouth send the vanishing caloric density signal to your brain, keeping you dipping into the bag.

The trifecta is completed with the one-two-three punch of sugar, fat and salt. With the perfect combination of these three nutrients, our taste buds send a message to the pleasure centers of our brains, saying, "Keep eating! More, please!" And so it goes.

If you're trying to eat healthier or cut out processed foods, an understanding of the psychology and science behind processed foods is a great way to start.

This is something I have always thought about.

Lot of brehs say foods like oatmeal and potatoes are good bulking foods because they are real heavy. But calorie wise they are pretty light for their weight. Heavy foods like that are GOAT CUTTING foods. 3 servings of oatmeal is only 450 calories... even with milk and sugar you might be talking 600. But that shyt will hold you down for hours, easily. Mix in some casein and you have a solid night time cutting meal.... 2 servings with some casein will hold you down till lunch time the next day.

On the flip side fatty melt in your mouth foods will help put the lbs on.... question iswhether those lbs are valuable. But its def something to consider.

Yeah it definitely has made me more conscious of what snacks I choose to eat now.

I think everyone is aware of fatty/salty stuff, but a lot of the time we think a little bag of chips is harmless. Except that it won't fill us up and we will want something else to eat a few minutes later...so eating the chips only added 300 unnecessary calories to the day.

I pretty much made it necessary at one point that I make a heaping serving of broccoli a couple times a day for the fiber and nearly zero caloric addition to my day. Keeps you fuller and lets you have better bowel movements. Green veggies, while expensive, can help you fill the gaps when your calories are in flux.

I've started eating celery to the end of meal for the same reason. By the time you chew through it your body catches up and tell you :whoa:

Chili with lean turkey meat, lots of an assortment of beans, corn, and tomatoes. Goat anything meal whether you're bulking or cutting. Just overall very light :ohlawd:

I'm a terrible cook. I just throw all that stuff together then put in chili mix. :yeshrug: It tastes good enough to eat but not good enough to go absolutely crazy on it for no reason. Perfect for me. :pachaha:
I don't blame you.

A lot of us are good at cooking for ourselves because we don't mind eating our mistakes.


But cooking for other people?

I can't handle junk foods or nuts all. My body just does not register that shyt. I could eat 5,000 calories nonstop of this shyt and it not even matter. So I try to avoid them all together unless I intentionally plan to indulge after a cheat meal.

That shyt is only for serious body builders and people trying to cut to the T.

Its not that serious honestly

Takes a few seconds. Just slap the food on the scale then slap it on the plate

It allows me to eat as much food as possible while still obtaining results

If I just 'played it by feeling' with the food I eat on a consistent basis I would get fat again

I refuse to give up candy/chips/etc....im not going to live with restrictions. So I just take a moment to weigh it

How much are you really having to weigh in a day though? Lots of shyt is pre-portioned or planned out in advance. I pull out my scale only 2 or 3 times a day.
