If you got a PSN account you can redeem now. Just sign in on computer. Code shouldn't expire though if you wait for PS5.

I have never waited but I have to imagine people buy them as gifts and they sit around till they are opened on Christmas.

Yeah you will get all those games with PSplus when you get PS5 at launch. It's like an instant game collection. They did before for people who bought Vita launch year too with PSPlus.
