Knowing that, will I enjoy Mario 64 or Galaxy now considering I didn’t grow up with neither of those games?

Mario 64 is worth trying...go for the DS remaster if you can. It shows it's age a lil bit but the level design is still strong.
Mario Galaxy 1 & 2 are masterpieces and hold up to this day. I loved Odyssey but I liked them more.

get a N64 emulator and download Mario 64 asap

Sunshine is prime platforming. the mechanics as amazing as using Cappy in Odyssey.

I remember playing it as a kid and could t get into it, keep in mind I grew up on Ratchet and Clank and Sly Cooper.
The Galaxy games are must play.
I would actually say Mario Sunshine is the weakest mainline Mario title and totally skippable.
