Strength, muscle mass, and definition are three different goals.
You can get strong without getting as much muscle mass as a body builder. Just look at powerlifters.
You can get definition or cut, but not be as strong as you think. Just look at bodybuilders, they have a lot of muscle mass and definition, but they don't have the same strength as powerlifters.
Definition comes by low weight, high reps. Mass comes by high weight, low reps. Strength comes by a combination of high reps and high sets and low reps and low sets.
You have to constant shock your muscle into growth with high weight/low rep workouts and low weight/high rep workouts for each muscle group.
When you start, a 25 lbs. dumbbell might be high weight for a dumbbell curl. As you get stronger, 25 lbs. becomes low weight.

Ideally you want to shift those parameters every 6-8 weeks
