It's quite clear what happened to Gamble in that scene. The Joker cut his entire mouth open and Gamble fell to the floor and bled to death. Or that's what I've always thought. Similar to how Lau burned to death on top of that huge pile of money. If you want to get technical though - Gamble got cut up, went to the doctor, got stitched up, and then moved out of Gotham to live a more mundane life in Metropolis or Central City.
