To avoid all the fiasco with trying launder money, why doesn't Gus just cut Walt a checks, appropriate taxes taken, included? Have him considered as an employee, so Walt can tell friends and family that he is working a legit job at the chicken place? Gus owns tons of stores right? Or was it that he owned a lot of them? Anyways, dude has to have major pull, so if Gus is so careful and paranoid why not take this route?
