If you do something like MMA or wrestling, do you still need to do cardio?

If so, how would you try to fit it in to your schedule?

My schedule right now:

Monday - 5x5 lifting
Tuesday - Rest
Wednesday - 5x5 lifting
Thursday - HIIT cardio (30 seconds on, 60 seconds off)
Friday - 5x5 Lifting
Saturday - HIIT Cardio
Sunday - Rest Day

Would something like MMA class replace cardio?

Use that Tuesday as a day to do long distance running. It doesn't have to be fast, but long distance at least.

I play soccer and try to get my cardio in if possible at least a mile

You still need cardio. Just do low intensity every morning and plan a hiit for once a week
