How do I go about it? All the tutorials on it I've found aren't that great, and I really want to get to making full songs.

My biggest struggle with sampling/beat-making is making an entire song. I can make a 15-second clip which sounds cool and loop that, but I don't know how to divide into a hook/verses/bridge and add variation.

Honestly listen to a couple of dope sampled beats, there isnt much of a change up just a couple of sequences if that and its dope.
Of course some samples are complex and will blow your mind, I like to listen to the same samples used by different artists and see how they incorporate the sample.
there is a site that is hated by producers its called www.whosampled.com there you can type in a sampled song or search by an artist like lupe who might have sample the temptations or you can search by the temptations and see who has sampled them and in what song.

What is kind of cool for researching purposes is when you hear a sample you like to reference it and see who has all sampled it and how the sample was used, you will see various similarities and differences.

check this vid if you have time its dope but its complex

just watch a few people remake beats on fl or you can watch this guy as he does live remakes
