Maps have been drawn and redrawn for centuries, doggie. As we learn more it becomes more and more accurate. Hell we haven't finished mapping the human body completely and you thought we had the complete accurate map of the world?
The maps we have now are up to date and accurate based on the technology and methods of the time they were drawn. As our technology gets better and better techniques are used it will get more accurate

Wait around for another 50 years and you'll see how it differs then from what you learned in junior high
